Neroli is the essential oil distilled from the fragrant white blossoms of the bitter orange tree (Citrus aurantium), long cultivated around the Mediterranean, particularly in Tunisia, Morocco, and southern Italy. The freshly picked flowers are steam-distilled, a process that distinguishes neroli from orange flower absolute, which is drawn from the same blooms by solvent extraction.

Its scent is luminous and unmistakably floral: a sweet, honeyed freshness lifted by green, slightly bitter facets and a clean, almost metallic coolness. Its name is believed to derive from Anne Marie Orsini, Princess of Nerola in 17th-century Italy, who reportedly used the oil to scent her gloves and bathwater.
